Irish Pastries Need Help With This Irish Dessert?

Need help with this Irish dessert? - irish pastries

I am now Conemarra cake feast of St. Patrick. I read the recipe and everything is easy, with the exception of some that I totally baffeled.

Conemarra Cake

Ingredients

1 cup self-rising flour

Sugar 1 / 4 cup

2 large groups

1 beaten egg

2 g of butter

Milk 1 / 4 cup

Pinch of salt

1 / 2 teaspoon ground ginger

Top: 1 / 4 teaspoon cinnamon, nutmeg 1 / 4 c. Tea.

Instructions

Sift flour, ginger, salt and sugar. Rub in fat. Add milk and eggs to bake a soft dough processing. Spread on a floured board. Cover the bottom of a buttered pie pan with dough. Grate apples into the batter. The whole thing with butter. With cinnamon and nutmeg on top. Bake in moderate oven for 1 / 2 hours.

The role that I do not understand is, "the knife into the fat", what they mean, it could mean a piece of butter? Btw, I flour instead of self-rising flour?
